Easy, Healthy, Chicken and Apple Salad Recipe!

Hello!
Happy Friday!! Are you ready for the weekend?! I am! Wooo Whooo!! The weather in California makes me want to just play, play, play...lol!

Today I'm posting a salad recipe that I found! I've never made it before BUT I love chicken and apples so this salad looks SOOO yummy!! I'm going to be making this for my family! I like the fact that it's easy and doesn't require cooking so that means more playtime for me! PLUS the recipe is healthy! Bring it on :D

Chicken and Apple Salad with Orange-Mustard Vinaigrette
Serves 4; double the recipe for a larger family

Ingredients:
1/2 cup pecan halves (optional)
3 Tbsp. orange juice
2 Tbsp. cider vinegar
2 tsp. grainy mustard
2 tsp. honey
2 Tbsp. minced shallot
1/2 cup olive oil
1 tsp. salt
4 cups cooked chicken,  chopped or sliced
2  granny smith apples, cored and chopped or sliced
10  cups mixed salad greens

Instructions:
Preheat oven to 350. Spread pecans on a baking sheet and toast, shaking sheet once or twice, until nuts are fragrant, about 5 minutes. Transfer to a plate to cool.
Whisk together orange juice, vinegar, mustard, honey, shallot, olive oil, and salt in a large bowl until well combined. Remove 1/4 cup vinaigrette. Add chicken and apples to bowl, with remaining vinaigrette and toss.
Arrange greens on dinner plates. Drizzle with reserved 1/4 cup vinaigrette. Top with chicken mixture. Sprinkle with nuts and serve.

This recipe is great when you don't want to spend time in the kitchen...add a side dish or two and dinner is served :D

I think we should take how we prepare our chicken seriously. If we cook it the wrong way, we can really get sick. If we steam it however and remove all the harmful fats, we can benefit from it. It will be a great protein source. But not as great as its plant based counterparts contrary to popular belief. I am having a hard time convincing even my own mom that we don't need meat or chicken or fish to be healthy. I am trying to stay away from cruel methods but if I can't help but eat chicken, it should only be on recipes like this. Salads are the best choice.
