I hope you've had a good week! Are you ready for the weekend?! BRING IT ON!! This is a busy time of year for those of us with teenagers who are graduating! I have a daughter graduating from High School in a few weeks! Our house is buzzzzzing with excitement as we prepare for the big day ahead!! ICE CREAM is a favorite dessert for many of us! Last night, I ate a bowl of ice cream while reading some graduation details :D I also grew up in Arizona and my very first job was at Dairy Queen! I mastered the art of making a perfect sundae and eating ice cream...lol! During the HOT summer months, ice cream was my best friend :) Summer's among us...the following are some ideas and options that let you enjoy a sundae or cone AND still look good at the beach! WOOO WHOOO!! Ginger Peach Frozen Yogurt With Raspberry Basil Sauce: To a small saucepan, add 1 1/2 cups fresh raspberries, 1 tablespoon finely chopped basil, 2 teaspoons honey, and 1 teaspoon lemon zest. Cook over medium heat, stirring occasionally, until raspberries break down and release their juice. Set mixture aside and let cool completely. To a food processor, add 1 pound frozen peach slices, 1 cup low-fat plain Greek yogurt, 2 teaspoons grated ginger, and 1 teaspoon vanilla extract; blend until smooth and custardlike. Serve immediately, or, for a firmer texture, freeze in a covered bowl for up to 4 hours, stirring and scraping the sides of the bowl every 45 minutes. To serve, divide ice cream among 4 serving bowls that have been chilled in the freezer for 15 minutes. Top each serving with raspberry sauce, 1 tablespoon slivered almonds, and sliced fresh basil. Serves 4. 161 calories per serving. When at the Ice Cream Parlor...eat this! 2 scoops of Baskin Robbins Oreo Cookies 'n Cream In A Cake Cone. At 345 calories, this is an indulgent treat but not a diet-wrecking one. 2 scoops is enough ice cream to make you feel satisfied, and the cone adds crunch for just 25 calories. When at the Ice Cream Parlor...DON'T eat this!! Baskin Robbins Oreo Layered Sundae. It has the same flavors as the cone BUT nearly 4 times the calories! It also packs a whopping 31 grams of saturated fat. MORE ideas... :D Banana Split: Slice, freeze, and puree bananas for a totally vegan, no-sugar-added ice-cream-like dessert. Add frozen berries for a customized flavor. Ice Cream Sandwiches: Use graham cracker squares instead of chocolate-chip cookies; fill with frozen yogurt or slow-churned ice cream, which has half the fat of regular ice cream. A Smarter Sundae: Start with 1 scoop of light ice cream and fill the rest of the bowl with fruit. Add a touch of chocolate syrup (it's lower-cal then hot fudge), and top with a tablespoon or 2 of nuts or granola. These are just a few delicious and HEALTHIER ways to indulge this summer!
