This pie from the new book The Campbell Plan, by global nutrition pathfinder Thomas Campbell, is made without eggs, butter, refined flour, or added sugar, meaning the deliciousness is all plant based! Which makes this pie a WIN WIN!! DATE FRUIT PIE Total time: 25 minutes plus chilling time Serves: 8 In a food processor at high speed, blend 1 1/2 cups walnuts, 1 cup pitted dates, 1/2 cup shredded coconut, 1 tsp vanilla extract, and 1/2 tsp cinnamon until paste forms. Press into tart pan and chill. Arrange 1/2 cup each: blackberries, blueberries, sliced strawberries, sliced kiwifruit, and/or sliced mango on top of crust. Chill 1 hour. Nutrition (per serving, using all fruits listed) - 228 cal, 4 g pro, 26 g carb, 5 g fiber, 19 g sugars, 14 g fat, 2.5 g sat fat, 2 mg sodium. That fruit tart looks so perfect out of the pan and filled so nicely. How did you get the tart crust out of the tart pan before filling it with fruit, without it falling apart???

Hi Jennifer! My tart pan has a removable bottom. I leave it on the bottom part of the pan while serving if it's already filled with fruit. OR u can remove the crust (make sure it's WELL chilled) from the pan then fill it with fruit. I hope this helps :)
