Recipe: Green Truffles!

Hi there!! HAPPY Humpday :D
How are you doing?! How's your week going so far?! Has it been productive?! I hope you're loading up with exercises this week!! If you haven't...no worries...dancing, walking, biking, or a few push-ups are a great way to get in some exercise :D Don't think of exercise as a dreaded task, make time for it to LOOK and FEEL FITastic! YOU GOT THIS!!

Today's post isn't on exercise :D Instead, I'm stealing a TRUFFLE recipe from Clean Queen, Candice Kumai. She's a classically trained chef and the author of several cookbooks, including the new Clean Green Eats.
I know...you must be thinking, I'm really posting a truffle recipe?! Chocolate...lol?! After all the chocolate I ate in Hawaii, you'd think it would be the last type of recipe I'd post today :D BUTTTTT didn't I say Halloween is 1 of my favorite holidays?! Every year, I try and make some kind of SPOOKtacular treat for my family and friends!! KEEP READING because these chocolaty treats are full of antioxidants and takes little time to make! Made with dark chocolate and pistachios, then dusted with matcha powder or ground green tea leaves, they're a yummy ending to any party or a nice gift when packed in a container or goody bag!! I'm excited about these babies :D


GREEN TRUFFLES 
Total time: 35 minutes plus cooling time.
Makes: 3 dozen.

In a saucepan, bring 2 to 3 cups water to a simmer. Place heat-proof glass or stainless-steel bowl over saucepan. Add 3 cups DARK CHOCOLATE CHIPS and 1/2 cup room-temperature HEAVY CREAM. Use spatula to mix well as chocolate melts. Remove bowl from heat and transfer mixture to parchment-lined loaf pan or shallow bowl. Cool completely, then chill 90 minutes to solidify. Using melon baller or hands, mold mixture into 1" balls. Place 1/3 cup CRUSHED PISTACHIOS in bowl. Roll truffles in nuts, pressing gently. Using fine mesh strainer or sifter, dust truffles with 1 Tbsp MATCHA POWDER or GROUND GREEN TEA LEAVES. Store in paper liners or parchment-lined tin and refrigerate until ready to serve.

Nutrition (per truffle): 115 cal, 2 g pro, 11 g carb, 2 g fiber, 8 g sugars, 8.5 g fat, 5 g sat fat, 3 mg sodium.
