You got this baby!!! Today's post is a salad recipe :) I'm feeling Spring in the air and this salad will keep you going for hours! Shake up your salad routine by tossing together a mix of different leaves (baby kale and baby spinach) for loads of taste and all kinds of texture!! Who knew this healthy salad would be a good way to keep the party (workout) going...lol?! SUPERGREENS SALAD WITH SHRIMP AND MANGO Prep: 15 minutes Serves: 4 Toss together 3 cups each of baby kale and baby spinach, 1 1/4 cups chopped mango, 2 cups chopped cucumber, 3 Tbsp chopped mint and half of the Chili-Lime Dressing (recipe follows). Top with 10 oz cooked large shrimp (peeled and deveined; about 16) and drizzle with remaining dressing. Sprinkle with 1/3 cup toasted shelled pumpkin seeds. Serve with lime wedges. 303 cal, 17 g fat (3 g saturated), 22 g protein, 17 g carb, 8 g sugar, 5 g fiber, 917 mg sodium, 150 mg cholesterol per serving. CHILI-LIME DRESSING The lime dressing is a flavor dynamo! Whisk together 2 1/2 Tbsp lime juice, 2 1/2 tsp chili powder, 1/2 tsp ground cumin, 1/4 tsp coarse salt, and 1 garlic clove (minced). Whisk in 3 Tbsp extra-virgin olive oil to combine well. 103 cal per 2 Tbsp. If you have ANY comments about this recipe...don't be shy :D Have an AWESOME couple of days!
