I hope you had a great weekend! Did you do anything fun?! My weekend was good...just ended up being busier then I expected! Didn't get to watch all the movies I wanted but that's how life rolls...lol! Maybe this weekend :D It's the beginning of a FRESH week so today I'm posting a FRESH recipe! The ingredients are easy to find, simple to assemble, a bit exotic, a bit bold, absolutely delicious, and HEALTHY! WOOO WHOOO!! Shrimp And Papaya Ceviche Serves: 6 6 cups water 1 fresh bay leaf 1 1/8 teaspoons kosher salt 1 pound medium shrimp, peeled and deveined 3 tablespoons fresh lime juice 2 tablespoons yuzu juice (Japanese citrus juice) or lemon juice 2 tablespoons sugar 1 ripe papaya, peeled, seeded, and cut into small chunks 1 tablespoon diced red onion 1 tablespoon minced jalapeno 1. Prepare a bowl of ice. To a large pot, add water, bay leaf, and 1 teaspoon of the salt. Bring to a boil, add shrimp, and cook until they just begin to turn pink, about 15 seconds, being careful not to overcook. Remove shrimp from heat, drain, and chill on ice. 2. In a medium bowl, add lime juice, yuzu juice, sugar, and remaining 1/8 teaspoon salt and stir until sugar and salt dissolve. Add chilled shrimp, papaya, red onion, and jalapeno. Gently toss and serve. My husband LOVES LOVES LOVES Ceviche! He'll eat it as a side, a meal, AND a dessert...lol! I LOVE that it's healthy! Makes this recipe a WIN-WIN!! Have a FABULOUS day!
