For the salad: 3 firm-ripe peaches, pitted and sliced into rounds 6 ounces buffalo (or other fresh) mozzarella, sliced into 8 rounds 2 ounces thinly sliced prosciutto, cut lengthwise into thirds fresh basil leaves, to taste For the dressing: 2 teaspoons extra-virgin olive oil 2 teaspoons white balsamic vinegar kosher salt freshly ground black pepper 1. To make the dressing, whisk together olive oil and vinegar in a small bowl. Season with salt and a good grind of pepper. 2. Arrange peaches, mozzarella, and prosciutto on a platter. In a medium bowl, gently toss the cucumber, watermelon, feta, thyme, vinegar, salt, and pepper together. 2. Garnish with basil leaves, if using, and serve.
