Two Easy Recipes With Fruit!!

For the salad:
3 firm-ripe peaches, pitted and sliced into rounds
6 ounces buffalo (or other fresh) mozzarella, sliced into 8 rounds
2 ounces thinly sliced prosciutto, cut lengthwise into thirds
fresh basil leaves, to taste

For the dressing:
2 teaspoons extra-virgin olive oil
2 teaspoons white balsamic vinegar
kosher salt
freshly ground black pepper

1. To make the dressing, whisk together olive oil and vinegar in a small bowl. Season with salt and a good grind of pepper.
2. Arrange peaches, mozzarella, and prosciutto on a platter. Spoon dressing over salad and top with torn bail leaves.  


I LOVE making new recipes, especially dishes that are easy to make AND allow me to spend more time outdoors!

Ingredients:
1 cup peeled, diced seedless cucumber
3 cups seeded, cubed watermelon
1/2 cup cubed feta
1 teaspoon fresh thyme leaves
1 tablespoon aged balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
fresh basil leaves, for garnish (optional)

1. In a medium bowl, gently toss the cucumber, watermelon, feta, thyme, vinegar, salt, and pepper together.
2. Garnish with basil leaves, if using, and serve.

Both recipes are good spring dishes, requires no cook time, easy to make, and on the healthy side! Wooo Whooo!!
